Calzones



Not much time to post today. (Work is crazy!) So I thought I'd share this awesome recipe I made last week. Calzones with roasted red peppers, spinach and feta cheese.

I made the dough included in the recipe and it was super easy, versatile, yummy and quick! I will definitely be using it again to make weeknight pizza or other stuffed pastry. It is really easy to work with! It is possible to use all prepared ingredients (pre-made dough, bottled peppers) and then this dish could be made in about 10 mins. I roasted my own peppers because i had a lot of red peppers I needed to use up! ;) And if you have a family of 3 - then you'll have one leftover for lunch the next day and they re-heat beautifully. Conversely, you could double the recipe and freeze the remainder for another night!

These were flavorful, filling and delicious and enjoyed by both Husband and Daughter. Not to mention it hits all the food groups (Dairy, veggie, whole grains...) At 386 calories a pop - you can't beat it!

- Heated seats (in the car)

I don't have heated seats!! The auto start makes up for it a bit though.

That calzone looks and sounds awesome!!

I like the idea of having half all purpose flour and half whole wheat. I am always looking for ways to make things better.
